Pan Seared Scallops
with Infused Asparagus Sauce

What you’ll need

Medium sauce pot

Large sauté pan

Ingredients

1 cup
250 mL

Almond milk

1 cup
250 mL

Roughly chopped asparagus; reserve tips (see tips)

½ tsp
2 mL

Kosher salt

¼ tsp
1 mL

Freshly ground black pepper

4 leaves

Fresh basil

1 tbsp
15 mL

Avocado or olive oil

U-10 scallops, foot removed

¼ cup
60 ml

Water

Optional

¼ tsp
1.25 mL

SYNR.G 1:1 Low Dose Cannabis Oil

Directions

STEP 1

Warm a medium sauce pan over medium/high heat. Add almond milk and bring to a boil.

STEP 2

Remove from the heat and add chopped asparagus, ¼ tsp (1 ml) salt and pepper, basil and if using, SYNR.G 1:1 Low Dose Cannabis Oil, and transfer to a blender or using an immersion blender in the pot, blend until smooth. Set aside.

STEP 3

Warm a large sauté pan over medium/high heat.  Add oil and place scallops into the pan and sear until golden brown, about 2-3 minutes (see tips). Flip and cook another minute. Remove from heat and transfer to a plate to rest for 2 minutes.

STEP 4

Add asparagus tips, water and remaining salt and cook until asparagus turns bright green, about two minutes. 

STEP 5

To serve, evenly divide asparagus sauce and asparagus tips in bowls and place scallops over top of the asparagus. 

STEP 6

Keep secured and out of reach of children

Tips and Tricks

I like to use the edible asparagus stems for soups and sauces and reserve the tips for garnish. The key to searing scallops is to leave it alone and allow for caramelization to take place, adjusting the temperature as needed. The scallop will naturally release from the pan once a sear has taken place.
